Need help, interested newbie Hondata tuner

Guys,
Need some help on understanding a little more before we commit ourselves to be a dealer. I understand that the S300 supports real time tuning but can we still tune real time with all the romeditor and emulator and laptop hooked up to the ECU with the S100 and S200? it says tunable? meaning we go by experience and then proceed to burn it? and burn it again if its not optimum?
I'm confused on how do we programme the EPROM if we cant make real time changes while performing steady load tuning on the dyno? it would go against all theories on tuning on the dyno. I just want to make sure as I've been reading and getting myself even more confused, for e.g this page shows no real time tuning supported http://www.hondata.com/sproducts.html
I am guessing that only is the case if you don't have the complete dealer kit? Sorry if I may sound like a newbie, its because I really am in Hondata. Thanks in advance guys. 8)
