Is the stock honda IAT sensor too slow to compensate for rapid changes in temperature (eg under boost?). I wonder if it is possible to change it with a faster response one.

It appears to react faster than my stock ECT sensor, so I would say you will be fine. But I have no scientific evidence to back that up. You could test it.
