ECU communication protocol and logging

I have a race car with a turbo K20A2, and would like to log data from an on track session. Using a laptop is a problem due to the harsh environment, would it be possible to get some information on the communication with the ECU so that i could write a piece of software to run in a non-windows environemnt to log raw data that could be downloaded ofter the session to analyze. At the very least I would need to know baud rate, information layout, is it polled or just spit out etc.

I had similar questions regarding polling the reprog ecu vs the stock ecu. I have written data logging software that constandly polls the stock ecu for various PIDs (always polling)
My question is with the hondata ecu could the communication between the ecu and pc be increased, but still allow the ecu safe time to get request w/out performance hinderance
Does anything change as far as communication? (The program should still work with the new ECU)
Any extra useful information that could be polled that is not avaiable with stock ECU.
If you could assist me in anyway I'd appreciate it!

Assuming you are talking about the OBDII protocol, the ECU supports the stock PIDs and nothing more.
