Stock 02 sensor and wideband sensor?

Ok guys i have a few questions.First of all i tuned my car with a very well known tuner who has quite a bit of experience with hodas and hondata.I really feal like he knows what hes doing as this is what he does for a living and has a great reputation.My problem as stated above is that a perfect a/f ratio turned into a very rich a/f ratio when i arrived back in my city.Their is a slight diffrance in temperature here, along with elevation and humidity.So i thought this may have bean a factor but it may not have bean after all.He then tell me that the stock 1volt 02 sensor is not very accurate.He says i should buy a 5 volt 02 sensor to be for sure what my a/f really is.Now im still a newb but have never heard anything about this from any member here.So im confused as to why he says this should be done.Now the car was tuned with a 5 volt 02 sensor on a dyno.Could that be why mine and his a/f differs so much.I just really want to know why i went from a 13.1 - 13.5 to a mid 11.00 a/f.
Now if wideband sensor on the dyno may be off by a point from my sensor how do you truly know what the correst a/f ratio is.
