Need some information from the folks here.

If I send my JDM ECU to be converted to Kpro, is the conversion reversible? Can I still use the stock map after the conversion process? Do I get a base map tuned for JDM K20A with I/H/E mods?

No it is not reversible and the ecu cannot be returned to stock. There is really no need to return it to stock as you can tune it to whatever leve of performance you desire.
