Additional sensor channels available?

I won't get into the specifics here of how it came to be but my FK8's K20C1 now has a factory oil temp sensor. Of course the factory wiring harness doesn't have a connector that will attach to it, but if there was somehow a way to connect the oil temp sensor to the ECU* would this be a data channel that could be logged?

*obviously my next question would be "How do I connect it to the ECU?"

The ECU will not be able to see it since it did not have this from the factory for this region vehicle.
