So I'm making selections on the "Mods" window and there's a section regarding throttle. I just need some clarification on Throttle Response vs Throttle Sensitivity. Is throttle sensitivity based on how sensitive your foot on the gas or is it based on how quickly the throttle plate opens? I know there was a thread that was opened about this topic but I'm still confused. I selected "Response Stage 1" and "Sensitivity Standard." I don't want the gas pedal to be too sensitive and already at high revs when barely putting my foot on it but I still want the quicker throttle response time if that made any sense.

Just try each and choose what you like the best.
