E85 on S300 V2: B18C5 / JRSC / LHT @ 10psi? What overall fuel trim?

E85 on S300 V2: B18C5 / JRSC / LHT @ 10psi?
I'm coming from Crome Pro and basically starting from scratch with the S300.
I found this map:

And I'm on 550cc RC Saturated injectors, so this looks promising.
Just looking at the fuel options, couldn't I just adjust the overall fuel trim % to compensate initially?
In the above map, the overall fuel trim is set to 13%.
Does that mean that it's adding 13% MORE fuel? Or does that mean that it's trimming (removing) 13% fuel?
I'd like to start by adding about 20% more fuel to account for the fact that I'm running E85.
So would that be in the 33% overall fuel trim range?
