new to tunning

I have a limited knowledge of tuning, but I learn fast. I have seen that with some street tuners they data log a WOT 3rd gear pull, and adjust from there. My concern with that being boosted, is going into boost without a proper tune could cause excessive knock and possible engine failure. How do I go about adjusting the fuel tables in the upper rpm band to lessen knock? Also is there a better angle to begin tuning from? I was able to clean up the idle and get the car mobile to begin tuning, using the greddy turbo kit base map. Right now the car idles at around 14.7 a/f and stays within 13.6 up to 3,500 rpm no boost with very light throttle. Beyond 10-20% throttle it becomes rich going lower than 10.0 a/r. I have not had a chance to work on the upper rpm range in fear of engine failure. I dont beat the car nor drive like an idiot. It is not my daily, any help is appreciated.
