Medium and High Load IAT Ignition Compensation

When I was tuning my car, the car would basically hit a wall if the ignition compensation for HIGH load was not either 0.00 or stock values. I tried using a 0.00 2.50 5.25 compensation when this occurred.
I checked the datalog and it wasnt lean cut.
Can you input different values into these tables and have it adjust correctly? I want to run 30* timing under 86* IAT, 2 degree retard (28*) up to 130, and 5 degree retard (25*) up to 175.
Will values of 0.00, 2.00 and 5.00 work? (I often am in the area of 140* IATs which is why I am asking and I dont want to run 25* all the time. Plus whenever this adjustment is made it registers a knock
