Beginner - how to tune a car hondata S300

I know this must sound odd but I have no idea on how to map a car even tho I own a dyno.
We bought a dyno to do power runs and to do obd flash maps and I thought when I get time i can teach myself how to tune a ecu.

Basically I would like someone to point me in the right direct on how to start learning.
Or if someone can guide me if they can, by either coming down to our premises or helping me over the internet

I want to learn mainly on hondata s300 as that what I would see myself using a lot more of as we specialise in Hondas!
