Mechanical noise? Have you changed the exhaust system? It might be worth pulling the spark plugs to see what is going on.

Recently added Skunk2 Alpha Header, Full Race Exhaust, Hybrid Racing CAI, Hybrid Racing Shifter Cable Bushings, Hasport 70a Rear Mount, and New NGK Spark Plugs.

I added all these mods relatively at around the same time.

I took 2 more datalogs today, long ones and had no more than 8 each log. So I am confused on what to do? Was the first one with 80 knocks just a freak occurrence?

Given the mods I am fairly sure it is mechanical noise. Either remove the modifications until you track down the source, or accept that the knock control will not work when you introduce noise to the engine.

So basically its just noise from adding aftermarket parts? Nothing I can do about it? As long as its mechanical noise I have nothing to worry about correct?

Can it just be from the stiffer 70a mount? I am not sure what to check for?

My main concern is I just dont want the engine to grenade itself or blow on me...

It is probably from the header, exhaust or engine mount, but I have seen it from just two parts touching and causing vibration. It means that knock control is not working, so you'll get a lot of retard. You could set the knock ignition tables high, but it would be better to fix the problem.
