New here... why there is 2 fuel and spark maps?

Hi guys, i'm sure the my question is maybe will make you laugh or something like that... BUT, i'm really want to know, why there is two maps for fuel and spark?(low speed and high speed)..
Is the low speed map is for, before the Vtec on and the high speed map is for when the Vtec on?
With which map i need to work and how?
That wil be very helpfull for me and i will know from where to start ( i was working with AEM till now and in the AEM maps the is not 2 maps for fuel and spark).

One is for the low cam profile and the other is for the high cam profile (VTEC).

O.k... so what you saing that the low cam can use almost all the day unless you making the vtec in?
