The MAP sensor looks clean. New air filter also.
I think I will return the car to stock and do a data log

Iv been running +6psi set up and my long term fuel trims are over -10 is this normal ?
Here in Montreal Canada it's around 30 degree Celsius with a lot of humility does this cause the fuel trims to be like this ? In the winter long term trims would be +1 - -1 long term. I have the factory Intake on ...

If the sensor has an output in the negative range of the table then there is a sensor fault, so the negative numbers are not used.

I don't think so, my LTFT stays within the same range regardless of traffic condition.
If LTFT goes up on traffic its possible that the STFT on lower RPM goes up as well that is why its giving you a higher average on long term duration.
Makes sense, ideally the lower G/S numbers like 0 1 2 3g ...

The +3 is rough estimate of the average you need to trim in the AFM from the given range. See how the car reacts to this and re test. From there you may calibrate your AFM by smaller clusters.
